Spelt is one of the world’s oldest cultivated grains and has been a staple of European baking for centuries. A distant cousin of modern wheat, it has never undergone the intensive hybridization that defines today’s commercial grain supply, which gives it a more primitive nutritional profile and a gluten structure that is often described as more water-soluble and gentler than standard whole wheat.
Our fresh-milled Spelt is stone-ground in small batches from non-GMO berries, keeping the whole grain intact. The result is a flour with a uniquely mellow, nutty sweetness, a beautiful creamy color, and a lighter, more delicate texture than you’d expect from a whole grain flour. It’s naturally rich in Vitamin B2, manganese, niacin, and dietary fiber.
Spelt performs beautifully across a wide range of baking applications, it’s tender enough for pie crusts and muffins, yet strong enough to carry a sourdough loaf with excellent flavor and a soft, airy crumb. It’s also a fantastic blending flour, adding complexity and nutrition when mixed with Hard White or Hard Red wheat.
Note: Spelt does contain gluten. Because its gluten bonds are more fragile than modern wheat, be careful not to over-mix doughs and batters, a lighter hand produces the best results.
