Sonora White Wheat has a story unlike any other grain we mill. One of the oldest surviving wheat varieties in North America, Sonora was introduced to California by Spanish missionaries in the late 1600s and became the foundational grain of early California baking for over two centuries. Today it’s an heirloom treasure, grown by a small number of dedicated farms committed to preserving its extraordinary flavor and heritage genetics.

We stone-grind our Sonora berries in small batches from Fat Uncle Farms right here in California, keeping the whole grain intact. The result is a flour with an exceptionally soft, fine texture, a beautiful pale ivory color, and a naturally sweet, almost buttery flavor profile unlike any modern wheat you’ve ever used. Its low-protein, soft-wheat character produces a flour that is simultaneously more delicate and more flavorful than standard whole wheat pastry flour.

Sonora’s defining use is the flour tortilla, and it produces the best you’ll ever make at home. The soft, pliable dough stretches easily, and the finished tortillas are tender, flexible, and faintly sweet in a way that store-bought tortillas can’t touch. But Sonora’s versatility extends well beyond tortillas: it’s exceptional in pastries, biscuits, flatbreads, pancakes, and anywhere you want a refined, gentle whole grain character.

Note: Because Sonora is a soft, low-protein wheat, it is not suited for standalone yeasted or sourdough bread. Blend it with Hard White at a 50/50 ratio for a bread with a uniquely silky crumb and heritage flavor.
