Our fresh-milled Soft White Wheat flour is stone-ground in small batches from non-GMO Soft White Winter Wheat berries, a low-protein variety specifically selected for its light, tender baking qualities.
Unlike Hard White or Hard Red wheats, Soft White has a naturally lower gluten content, which means less structure, less chewiness, and a beautifully soft, fine crumb. This makes it the gold standard for whole grain pastry baking: pie crusts that shatter, biscuits that melt, muffins that rise light and tender, and pancakes that are genuinely fluffy. The clean, mild flavor won’t overpower your ingredients, it supports them.
At just 8–10% protein, Soft White behaves much like a commercial pastry flour, but with the full nutritional profile of an intact whole grain, fiber, Vitamin E, B vitamins, and healthy fats from the preserved germ.
Note: Because of its low gluten content, Soft White Wheat is not ideal for yeasted bread on its own. For bread, reach for Hard White or Hard Red. Soft White shines in everything else.
