Khorasan wheat, sold commercially under the trademarked name Kamut, is one of the most ancient and nutritionally dense grains in existence. Often called “King Tut’s Wheat” for its legendary origins, Khorasan produces massive, amber-colored kernels that stone-grind into a flour with a distinctly rich, buttery, and slightly sweet flavor unlike anything in the modern grain world.
We mill our Khorasan in small batches, preserving the complete grain, bran, germ, and endosperm, so you receive the full spectrum of nutrients this ancient wheat has to offer. Khorasan is naturally high in protein (significantly more than modern wheat), selenium, zinc, magnesium, and antioxidants. Because it has never been hybridized, many people who experience difficulty with modern wheat find Khorasan much easier to digest, though it does contain gluten.
Its unique gluten structure creates a firm, golden crumb that performs beautifully in pasta, artisan bread, and pizza, and its natural sweetness means you can often reduce added sugar in cookies and pastries.
