Our Hard White Wheat flour is stone-ground in small batches from premium non-GMO Hard White Winter Wheat berries sourced from farms right here in California. Unlike modern roller-milled flours that strip the bran and germ to extend shelf life, we keep the entire berry intact, delivering a flour that’s naturally rich in fiber, protein, Vitamin E, and B vitamins. Because it lacks the tannins found in red wheat bran, Hard White produces a lighter, milder crumb that the whole family loves, without sacrificing an ounce of nutrition.
Note: Like all fresh-milled whole grain flours, this flour is not bright white. It carries a warm, creamy tone from the intact bran and germ. Your breads and rolls will be golden and flavorful, far more so than anything from a grocery store shelf.
