Einkorn is the world’s oldest cultivated wheat, and one of the most nutritionally remarkable grains you can bake with today. Unlike modern wheat varieties that have been repeatedly hybridized for yield and shelf life, Einkorn’s genetic makeup has remained essentially unchanged for thousands of years. We stone-grind our Einkorn berries in small batches, preserving every bit of the bran and germ, along with the naturally higher levels of protein, antioxidants, lutein, and essential minerals that make this ancient grain so special.
Einkorn’s different gluten structure, simpler and less elastic than modern wheat, creates a uniquely light, tender texture in cakes, muffins, and pancakes. For bread bakers, it offers a golden hue and a complex, nutty sweetness that modern whole wheat simply cannot match. Many people who find modern wheat difficult to digest report a noticeably better experience with Einkorn, though it does contain gluten and is not suitable for those with celiac disease.
Note: Einkorn behaves differently than modern wheat. It absorbs liquid more slowly, reduce your hydration by about 15–20% when substituting in recipes written for modern flour, and give your dough extra time to rest.
