Our Kern River Milling Story
Kern River Milling is a small-batch flour company based in Bakersfield, California, specializing in fresh-milled whole grain flour and organic wheat berries. Rooted in heritage and inspired by local milling history, we believe real bread starts with real flour—milled fresh, full of nutrition, and made with care. From sourdough loaves to muffins, our stone-ground flours are handcrafted in a home kitchen using 100% whole wheat berries, including the bran, germ, and endosperm. We offer local pickup only, in Bakersfield, CA. We do not offer shipping. Whether you’re a seasoned baker or brand new to fresh-milled flour, we’re here to help you return to the way bread was always meant to be—wholesome, flavorful, and alive.
Elevate your kitchen with stone-ground flour milled right here in Bakersfield. We exclusively process premium, non-GMO wheat berries to provide you with nutrient-dense ingredients that commercial flours simply can’t match.
Freshly Milled in Bakersfield: Your Questions Answered
What makes fresh-milled flour different from store-bought flour?
Most store-bought flour is “refined,” meaning the bran and germ are removed to extend shelf life. Our flour is stone-ground and includes the entire wheat berry—bran, germ, and endosperm. This preserves nearly 40 essential nutrients and provides a richer, more complex flavor.
FAQ: Shipping & Freshness – Why are your shipping rates higher than other flour brands?
Because our flour is freshly milled without the preservatives found in grocery store bags, it is a “living” product. To ensure you receive it at its peak nutritional value and flavor, we exclusively use Next Day and 2nd Day Express shipping. Standard ground shipping takes too long, which can cause the natural oils in the fresh grain to lose their sweetness and freshness before they reach your kitchen.
Is your flour organic and non-GMO?
Yes. We use premium, non-GMO wheat berries, and much of our selection—like our Hard Red and Hard White wheat—is sourced from organic farms.
How “fresh” is your fresh-milled flour?
We take freshness to the extreme. Unlike commercial mills that store flour in silos for weeks or months, we don’t even turn on the mill until your order is confirmed. To ensure you receive the maximum nutritional value and the peak of flavor, we mill your grains exactly one hour before your scheduled pickup time. When you grab your bag, there’s a good chance the flour is still warm from the stone-grinding process!
Why do you mill it so close to the pickup time? As soon as a grain is cracked open, its nutrients begin to oxidize. By milling it just 60 minutes before it’s in your hands, we ensure:
Peak Nutrition: You get 100% of the vitamins and minerals (like Vitamin E and B) before they degrade.
Volatile Oils: The natural oils in the wheat germ are at their most fragrant, giving your bread an incredible aroma.
Zero Preservatives: Because it’s milled to order, we never have to add chemicals or shelf-stabilizers.
What if I’m running late for my pickup? Don’t worry! While we aim for that “one-hour window” to give you the best product possible, the flour remains at peak freshness for several days. However, to maintain that high quality at home, we recommend getting it into your fridge or freezer if you don’t plan on baking with it within the first 24–48 hours.
