Rye is one of the most misunderstood grains in the home baker’s pantry, and one of the most rewarding once you get to know it. Our fresh-milled whole grain Rye flour is stone-ground in small batches, keeping the complete rye berry intact to preserve its characteristic earthy sweetness, complex flavor, and remarkable baking properties.

Rye’s naturally low-gluten, high-pentosan profile is what makes it so unique. Pentosans are water-absorbing carbohydrates that give rye doughs their characteristic sticky, dense texture and are responsible for the long-lasting moisture and shelf life that rye breads are famous for. This also makes rye flour the single best grain for feeding and building a sourdough starter, it ferments rapidly, with wild activity that brings your starter to life.

Don’t limit rye to bread alone. Our stone-ground Rye is surprisingly versatile, it produces tender, fudgy brownies, earthy-sweet pancakes, and deeply flavorful muffins and quick breads that you simply can’t replicate with store-bought flour.

Note: This is a whole grain dark rye flour, the full berry, bran and germ included. If you’re used to light or medium rye, expect a deeper color, more robust flavor, and higher fiber content. Start by blending it at 20–30% with Hard White or Hard Red for an approachable introduction.
